Ingredients
- 2 cups all-purpose flour
- 2 1/4 tsp active dry yeast
- 1 tsp salt
- 1/2 tsp sugar
- 3/4 cup warm water
- 1/4 cup olive oil
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped pepperoni
These ingredients will make approximately 6-8 pizza hot pockets, depending on how big you make them.
Making the Dough
In a large mixing bowl, combine the flour, yeast, salt, and sugar. Add the warm water and olive oil, and stir until a dough forms. Knead the dough on a floured surface for about 10 minutes, until it becomes smooth and elastic.
Place the dough in a greased bowl and cover with a towel. Let it rise for about an hour, until it has doubled in size.
Creating the Filling
Preheat your oven to 400°F. In a small bowl, mix together the pizza sauce, shredded mozzarella cheese, and chopped pepperoni.
Assembly and Baking
Punch down the dough and divide it into 6-8 equal pieces. Roll each piece out into a circle, about 1/4 inch thick. Spoon some of the filling onto one half of each circle, leaving a small border around the edge.
Fold the other half of the dough over the filling and pinch the edges together to seal. Use a fork to crimp the edges and prevent any filling from leaking out.
Place the pizza hot pockets on a greased baking sheet and bake for 20-25 minutes, until golden brown. Let them cool for a few minutes before serving.
